Dear Dr. Pesek,
I took a class with you last semester at CSU and took to heart the wisdom you had to share about nutrition. I have cut out all the bad processed foods in my diet and replaced them with proper natural foods. Within two weeks of the diet change I noticed a remarkable difference in all of my physiological functions. I have more energy, higher cognitive functions, a reduction in illness. Basically I feel like a million bucks! Before I took your course I was so frustrated with the fact that I had very little energy no matter how much I slept, I kept thinking to myself " Why does a 26 year old have the body functions and energy of a 70 year old?!" Also I was always hungry no matter how much I ate, and I was always the victim of the latest virus. Now that I have the right nutrients in my diet I eat less and have energy to spare and never seem to get sick. It wasn't' hard to give up junk food, I took baby steps just exchanging good for bad along the way, and something amazing happened. Soon, I craved good foods and was disgusted by the bad foods (I can't even stomach the processed foods.) It’s now one of my favorite hobbies to play “how nutritious is this food” I will go online and research foods to gain a better understanding about what I’m putting in my body I make a game out of it! One of my favorite things you told me about was chia seeds, and adding them to smoothies is my favorite. I throw in some blueberries, pineapple, oranges, chia seeds, flax seeds, oats and plain yogurt (or any organic fruits I find on sale) and blend them up for a great breakfast that gives me boundless energy throughout the day! Anyway, I just wanted to share that with you to let you know you made an incredible difference in my life. So thank you for all the effort and to took to educate me on proper eating habits, and I look forward to reading your book!
