Talk about local and organic. This fall soup was grown in our front yard! It is 100% organic and local. In fact, you don't get much more local than walking out your front door, eh? These veggies were in our front yard just moments prior! Check out the celery! It grew quite well this year. Celery or Apium graveolens is a plant species in the Apiaceae (or formerly Umbelliferae) family along with carrot, parsnip, angelica and fennel. Originally, celery was a bog veggie, so it has done well with ALL the rains we have been having this season. Celery is a Superfoods superstar! It is mother nature's electrolyte replenishment—all that nutrition and it is delectable too!
Celery contains phthalides which help to support healthful circulation and promote cardiovascular health. It also contains awesome amounts of Vitamin K and Vitamin C which help out with the aforementioned as well. In addition, celery has a slew other health empowering phytochemicals. It’s no wonder that celery has been used for millennia to treat conditions such as high blood pressure, gout, poor circulation and inflammation. My favorite way to munch the crunchy goodness in celery is to eat it raw—I love to dip it in sprouted hummus! I also like to juice it with green apples, garlic and kale, and, of course—there is the favorite front yard soup!
